Job Description:
As a Head Baker at Sofi, you are a key member of the management team, responsible for leading the creative and operational direction of our bakery. You will oversee all aspects of Back-of-House (BOH) operations, including production planning, team leadership, and quality control, while driving menu development and innovation. Your expertise in sourdough, viennoiserie, and pastry, combined with your proven leadership experience, will uphold Sofi’s commitment to craftsmanship, efficiency, and excellence.
Responsibilities
- Serve as part of the management team, actively contributing to operational strategy and decision-making
- Oversee all BOH operations, ensuring smooth daily production and consistent product quality
- Lead creative development, including R&D, menu planning, and seasonal product innovation
- Manage fermentation processes and the handling of sours for bread and croissant production
- Plan and coordinate daily and weekly production schedules
- Align weekly production quantities with shop demands, private orders, and B2B clients
- Supervise, train, and mentor new and existing staff, ensuring high standards and efficient workflow
- Maintain clear communication across all teams (BOH + FOH)
- Oversee ingredient ordering, stock management, and supplier relations
- Receive and organize orders, ensuring proper storage and rotation of goods
- Conduct monthly inventory and track all production materials
- Monitor hygiene procedures, cleaning schedules, and equipment maintenance
- Foster a respectful, supportive, and collaborative kitchen culture built on teamwork and professionalism
Task
Operations
- Participate in daily production, including scaling, mixing, shaping, baking, and finishing
- Ensure consistent quality and adherence to Sofi’s recipes, fermentation methods, and standards
- Maintain organized and efficient workstations to optimize workflow and reduce waste
- Uphold food safety, hygiene, and sanitation standards
- Operate, maintain, and oversee all bakery equipment (ovens, mixers, proofers, etc.)
Personnel Tasks
- Lead and motivate the baking team to achieve production and quality goals
- Support the onboarding, training, and ongoing development of bakers and kitchen staff
- Organize and manage the BOH rota, ensuring optimal coverage and efficiency
- Promote a positive work environment grounded in respect, communication, and excellence
Qualifications
- Proven professional experience (5+ years) in a leading bakery or head baker role
- Strong expertise in fermentation, sourdough, viennoiserie, and pastry production
- Demonstrated leadership and management experience in bakery or restaurant settings
- Proven ability to lead BOH operations and contribute to menu and product development
- Excellent organizational, communication, and problem-solving skills
- Passion for innovation, quality, and hospitality
- Ability to thrive in a fast-paced, high-standard production environment
- Fluency in English required; German language skills are an advantage

Responsibilities
- Instructing and guiding staff on their daily tasks to ensure the smooth running of the bakery
- Contribute towards recipe development in collaboration with the Head Baker and senior baking team
- Training of new employees
- Monthly inventory
- Support with quality control and problem solving any issues that may arise
- Overseeing both daily and weekly deep cleaning tasks
- Ensuring clear communication between BOH and FOH
- Support on ingredient ordering of fresh items as well as dry goods

- Adhere to food safety and hygiene regulations to maintain a clean and sanitary workspace.

Qualifications
- Proven experience in baking and team leadership
